How do I set attributes in my triggered workflow?

Once we get past the first pass of making workflows like the examples that come out of the box, one of the areas that we get into very quickly is the idea of triggered workflows.

For the purposes of this description, I'm mostly referring to the idea of setting a workflow that's triggered from something like a group member trigger or a connection request.
