Ability to Include Commas in Single/Multi-Select Fields

It seems like every couple weeks someone posts in Rocket.Chat about adding a comma to a single/multi-select field. The answers in chat vary and they seem to be inconsistent across versions and single vs multi-select. It would be helpful if there was a consistent solution.

I like the idea of being able to select our own delimiter, but I don't know if that would add unnecessary complexity. A simple way to escape commas would work as well.
