Option to set Record and Connection Status in Sign-ups block

With the new Sign-ups feature, all new person records created are defaulted to Active/Visitor. As part of our data clean-up process, we have implemented a system that sets descriptive Record Statuses to help determine how/why a new person record was created. (e.g. Records from the Registration block come in as "New from Registration") We would like to be able to choose a default record status of "New from Sign-up" in the block settings to help with data integrity.

Similarly, we would also like to be able to default the Connection Status of a new record from a sign-up to Participant rather than Visitor, as many of our sign-ups are open community volunteer projects. We use the Visitor status for people who actually attend on a Sunday morning.
