Expose Fill-in Highlight/Background Color for Rock Mobile

Fill-In fields in Rock Mobile are interactive inputs, but still lack enough contrast and still feel visually cramped, which makes them easy to miss and harder to tap. The previous change produces the same results – a light gray, tight field. We're looking for a color pop.

Since these elements are rendered natively in MAUI and not styleable via CSS, could Rock Mobile expose a small set of theme tokens specifically for Fill-In fields?
